Big Magic. I knew going in that it would be a motivational-type book. Designed to kick your lazy, scared butt in gear to do that thing you always wanted to do. Or things. Or go back to them. Reinvest yourself or reinvent yourself.

Rah Rah books tend to put a bit of a cringe on my face and in my heart, especially if  they venture towards New-Age-y-ness.

But I did enjoy Eat, Pray, Love and was interested to see what she had to say. And, you know, I really do need that kick in the butt.

Kelp Noodles with Almond Sauce

This dish is balancing for pitta and kapha; vata should use the almond sauce liberally to balance out the dryness of the kelp noodles. The suitability of the suggested toppings for the doshas is indicated by the abbreviations in parentheses.

Makes 3 servings
Gluten-Free F Vegan

1⁄2 tsp    minced seeded jalapeño pepper    2 mL
1⁄8 tsp    chili powder    0.5 mL
1⁄2 cup    water    125 mL
3 tbsp    almond butter    45 mL
1 tbsp    pure maple syrup or coconut sugar    15 mL
2 tsp    tamari    10 mL
1 tsp    apple cider vinegar    5 mL
12 oz    kelp noodles, rinsed    375 g

Suggested Toppings
    Chopped fresh cilantro (VPK)
    Finely chopped raw fennel (VPK)
    Steamed finely chopped cabbage (PK)
    Steamed julienned carrots (VPK)
    Finely chopped green onions (VK)
    Sesame seeds (V)
    Green pumpkin seeds (VPK)

1.    In a large skillet, combine jalapeño, chili powder, water, almond butter, maple syrup, tamari and vinegar. Cook, stirring, over low heat for 5 to 10 minutes or until thickened. (Do not let boil.)
2.    Stir in kelp noodles and cook, stirring, for about 2 minutes or until noodles are softened and infused with flavors.
3.    Serve with any of the suggested toppings, as desired.

Tip
Although soy sauce contains wheat, tamari is wheat-free; however, if you are allergic or sensitive to gluten, always read labels to make sure the manufacturer did not add wheat. Also check to make sure traditional brewing methods were used, as this ensures the highest quality.

Kelp Noodles
Kelp noodles are low in fat and are a good source of iron, calcium, iodine and other trace minerals. They are gluten-free, low in calories and low in carbohydrates, with a neutral taste. The drying process and removal of the outer skin make them suitable for kapha and pitta, even though they are salty. While they can be eaten raw (they are dry and crunchy), I recommend lightly sautéing them to moisten them and aid digestion. For vata, kelp noodles must be cooked and served with a moist, heavy, grounding sauce or in a soup, and should be eaten in moderation.

Pomegranate Orange Chip Bars

The merger of chocolaty, chewy goodness with heart-healthy oats and pomegranate created this divine bar — a taste of bliss in every bite. All doshas should eat it in moderation.

Gluten-Free F Soy-Free F Vegetarian

* Preheat oven to 350°F (180°C)
* 8-inch (20 cm) square metal baking pan, lined with parchment paper

1⁄2 cup    coconut sugar    125 mL
1⁄2 tsp    ground cinnamon    2 mL
1 tsp    grated orange zest    5 mL
1⁄4 tsp    Himalayan salt    1 mL
3⁄4 cup    almond butter    175 mL
1⁄4 cup    unsalted butter    60 mL
1 tbsp    pomegranate syrup (see Tips)     15 mL
1    large egg, beaten    1
3⁄4 tsp    baking soda    3 mL
11⁄2 cups    quick-cooking rolled oats    375 mL
1⁄4 cup    gluten-free dark chocolate    60 mL
    chunks (70% to 85% cacao)

1.    In a large bowl, combine sugar, cinnamon, orange zest, salt, almond butter, butter and pomegranate syrup. Stir in egg. The batter will be very thick and oily. Stir in baking soda. Stir in oats and chocolate chunks until well incorporated. Spoon into prepared baking pan.
2.    Bake in preheated oven for 20 to 22 minutes or until the edges just start to brown. (If the entire top is brown, the bars are overcooked and will be very dry. The dough should be soft coming out of the oven.) Let cool in pan on a wire rack for 10 minutes, then cut into bars and transfer bars to the rack to cool completely.

Tips
Store the squares in an airtight container at room temperature for up to 3 days.
The batter can be stored in an airtight container in the refrigerator for up to 1 week.
Pomegranate syrup (also known as pomegranate molasses) can be purchased at international grocery stores or in the international aisle of major grocery stores.

This almost seemed like two books to me. The dystopian project that Stan and Charmaine join - for better or for worse, and the frenetic farcical ejaculation thereof.

I have to admit I wished the book would slow down and enjoy the ride, or maybe I just wanted to get away from normal life and stay in the made up world.

What we know for sure, from any and all stories we have read - one cannot leave well enough alone. We have to try the door that we are not allowed to open, the box, the envelope, whatever. It is in our nature to break free and ultimately fuck up the quietude.

And as much as I protest that Margaret Atwood's novels hold the reader at an emotional arm's length, I felt a little closer this time. A little.

Interesting read.

Ah, the trippy books of yore. I remember reading fragmented, jarring, Beat-type novels at my father's place way up in the Canadian North.

Beatlebone, winner of the 2-15 Goldsminths Prize, has that tone - set to John Lennon's stream of consciousness melt-down towards the end of his life.

I am either too young or too old for this style of book, I guess. But I did find it helpful to listen to the dialogue (in my head) in the style of the old Beatles cartoon movies. Minus the Blue Meanies.

I was fifteen years old when I read my first Oliver Sacks book, The Man Who Mistook His Wife for a Hat.
I was instantly a fan. Sacks has the ability to make his readers interested and intrigued with his parables of medicine and neuropathy. He was a scientist and a storyteller. And one of the few people in history to combine the two in a way that made the lay person feel a part of his world.

I have read many of his books, most recently his autobiography, and was saddened by his death a couple of months ago. He was a special man.

Gratitude is a slim book of reflection from this incredible human being. A gift from him to us. In the end few words are needed.

Oliver Sacks

Oliver Sacks was a physician, writer, and professor of neurology. Born in London in 1933, he moved to New York City in 1965, where he launched his medical career and began writing case studies of his patients. Called the “poet laureate of medicine” by The New York Times, Sacks is the author of more than a dozen books, including The Man Who Mistook His Wife for a Hat, Musicophilia, and Awakenings, which inspired an Oscar-nominated film and a play by Harold Pinter. He was the recipient of many awards and honorary degrees, and was made a Commander of the British Empire in 2008 for services to medicine. He died in 2015.

I love anything that Jo Nesbo writes, and Midnight Sun (along with Blood on Snow) are special adjuncts to the genre that he portrays so well.

In this book we see a little more of a blossoming of hope. A wanting to believe in others and in ones self.

The Harry Hole series will always be my favourite of his books, but for the fans of this series and Nesbo in general - Midnight Sun will scratch that itch until the next installment.

I love Sushi. Not really until I was in my twenties and a good friend with a great pension used to take me out for such treats. (Really, Toronto and surrounding regions are great for multicultural foods. You can find anything here, all ranges in prices and quality and authenticity and combinations thereof.)

Sushi has history and procedure and is interactive. It is an event as well as a great meal.
And you can make it at home. Seriously. I do. You can too.

The word Sushi refers to the rice. In Japan, junior sushi chefs spend a great amount of time learning the basics of perfect sushi rice. It is a skill, and it is worth learning, and us North American home cooks can be a little easier on ourselves than the Japanese Sushi Masters.

The Complete Guide to Sushi and Sashimi is the most comprehensive guide for us sushi enthusiasts that I have ever seen. It lays flat, does not assume you have prior knowledge, and gives you step by step instructions for making any and every kind of sushi, along with the basics to get you going.

By far the best guide to making sushi and sashimi at home that I have ever seen. And, being born in Japan and having quite a taste for sushi, I have looked at many a guide.

Hand-Shaped Sushi Nigiri

MAKES 20 PIECES

This is the basic technique for making nigiri. But even though it’s somewhat basic, it will require a lot of practice. Until you master hand-shaping the sushi rice, it’s best to limit the types of fish you practice with, to avoid any waste. Preslice the fish using the sogizukuri technique (see page 119) before beginning the recipe.

Flip Method (Yokotegaeshi)
2 cups    Sushi Rice (see recipe below), divided    500 mL
20    pieces sushi fish (about 1 lb/500 g),    20
    sliced sogizukuri-style
Dab    wasabi paste    Dab
    Pickled ginger
    Wasabi paste
    Soy sauce

TIPS
Any type of high-quality fish can be used to make nigiri. Tuna, salmon, yellowtail and white fish are all excellent to use if you are a beginner. Once you become more proficient, you can try flatfish and shellfish.
To make these using the roll method (kotegaeshi), in Step 9 use the fingers of your guide hand to roll over the sushi so that it is fish side up.
When making nigiri, you will need to rewet your hands repeatedly to prevent sticking. If you prefer, use nonstick gloves.

EQUIPMENT
•    Wet towel
•    Nonstick gloves, optional

For vegetarian sushi: Try using pickled vegetables found at Japanese supermarkets, such as cucumber (kyu¯ri), eggplant (nasu), burdock root (gobo), daikon radish (takuan), ginger shallot (myo¯ga) or Japanese turnip (kabu). You can also use fresh or lightly blanched daikon sprouts (kaiware). In fact, you can use any vegetable you have on hand, as long as it will stay on top of the rice (although you can use a piece of nori to help; see page 147).

Sushi Rice Shari

MAKES 4 CUPS (1 L)

Making rice for sushi is the most important thing you will learn in this book. Without good sushi rice, you can’t make sushi. Apprentice chefs in Japan may take one to two years to perfect rice before they move on to fish. Using a rice cooker will take some of the guesswork out of cooking rice, but following this recipe will help you to cook it on the stovetop.

2 cups    water    500 mL
2 cups    sushi rice    500 mL
1    piece (4 inches/10 cm) konbu optional  1
1⁄2    batch Sushi Vinegar     1⁄2

EQUIPMENT
•    Fine-mesh sieve
•    Large bowl
•    Heavy saucepan with tight-fitting lid
•    Hangiri, optional
•    Rice paddle (shamoji) or spatula
•    Fan, optional

TIPS
While your rice is cooking, soak your hangiri and rice paddle in cold water to prevent sticking. Drain and wipe dry before adding the rice. If you don’t have a hangiri, use a wide, shallow non-reactive bowl or a clean wooden salad bowl.
If you don’t have a Japanese rice paddle (shamoji), use a wooden or silicone spatula, lightly moistened with water.
Your finished rice should be subtly flavored, free of any clumps and firm but tender, never mushy.

TEMPERATURE MATTERS
When making nigiri, it is important to work quickly. If you go too slowly, you will transfer too much body heat to the fish and rice, which will make it too warm for serving (sushi should be served at room temperature). This is why it is best to practice making rice balls without the fish, until you develop comfort and speed.

Jeffrey Elliot
has a degree from the Culinary Institute of America and has cooked at prestigious restaurants such as Le Cirque, and Le Bernardin in New York, he was also the Executive Chef of a group of Japanese restaurants in Miami. Since leaving the kitchen he's gotten an MBA, been a stockbroker, and worked for Share Our Strength www.strength.org, a not for profit dedicated to eradicating childhood hunger in America. After that, Jeffrey was the Director of Culinary Relations for four of the world’s largest luxury housewares brands; Zwilling JA Henckels, Miyabi, Demeyere, and Staub, as well as the Executive Chef and Brand Ambassador of Zwilling JA Henckels USA.
During his time at Zwilling, he coauthored the ZWILLING JA HENCKELS Complete Book of Knife Skills, which was praised by Good Housekeepingmagazine as “the ultimate book on the subject”. Jeffrey is the president of Culinary Relations, a full service marketing and PR agency that specializes in housewares. He resides in Philadelphia, Pennsylvaniawith his wife Jill Sloane, sons Henry and Parker, and Havanese Ruby.


Robby Cook
is the executive sushi chef at one of New York City’s most respected and influential sushi restaurants. He has been making sushi professionally for the past 11 years. Robby’s hobbies include collecting Knives, Shoes, Frogskins, Craft Beers, and Vinyl Records. Dj’ing.
